the adventures of Teiko and Joy.....food glorious food...







Inspired by amazing and addictive channel 4 tv series "Come dine with me" The curvy and sultry Nigella Lawson and of course my wonderful niece Joy, an amazing chef, on Sunday after church we decided to have a showdown in the kitchen...food was lovely esp the Muffins..yum!







Teiko's dish
Lime and Ginger Salmon fillets with mozzarella and avocado salad
what u need



Joy's dish
White and Milk chocolate chip muffins with double cream!!




it was really fun! to achieve this afternoon treat ....

Teiko

4 salmon fillets (responsibly farmed)

for marinade...

1 lime
2 teaspoons of mustard
1 teaspoon of chilli powder
Herbs and spices
3 garlic cloves
Ginger (to your taste)
Sea salt

for salad
cos lettuce
1 avocado
mozzarella
1 red apple
½ red onion

Joy...



see below ;-) 400g self raising flour,200g caster sugar, 200ml vegetable oil, 400ml milk and white chocolate chips ...add liberally ;-)

all this can be achieved in a few easy steps...

Joys Muffins!







flour and sugar



add beaten eggs, oil and milk





pour and mix





tasty! Joy can cook..!



eat till u cant eat no more...

salmon! De-scale if nec



mix all the marinade ingredients and thin slices ginger



fry salmon for like 5 mins in lil oil and a lil marinade



pour the rest of the marinade and add lime



wrap and put in the oven for like 20mins med high

It seems only yesterday i was bloggin about designers and musicians from Ghana, this Spring/Summer i cant help but notice the comeback of all things African, from music to fashion, to film, its a good time to soak up some culture from the motherland....these are my favouite images, sites and sounds...this entry im looking at music fashion and art in place of my usual spring wishlist..enjoy!
